Purple Potatoes

Scott brought home some purple potatoes the other day so I thought I would give them a try and make them for dinner. I had seen this kind of potato cooked on Food Network before but that's about it. They aren't grown here in Idaho, but they ship them here from Arizona. Here is what they look like. The ones on the right are peeled and the ones of the left aren't peeled.

Here is the finished product of mashed potatoes. Yes, it does look like play-do, but they taste like regular russet potatoes. They have the same taste, texture, and consistency as any other potato. Yummy!! I just wanted to share my crazy food experience with you!!

How cool! I have seen purple potatoes on TV - but have never tried them. I saw purple cauliflower at a store the other day - I may have to try it.

Those potatoes are awesome! We planted some blue potatoes last year but they didn't grow blue. THey were all regular so we were disappointed. I will have to look for those, thanks :)
